Caramelised Onion & Goat Cheese Pie / Πίτα με Καραμελωμένα Κρεμμύδια και Κατσικίσιο Τυρί

 
 
 
Ingredients
  • 2 - 3 large onions, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons balsamic vinegar
  • 200 gr (7 oz) hard goat cheese, crumbled
  • 3 eggs, lightly beaten
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cervil
  • 3 tablespoons corn flour
  • 2 tablespoons milk, for coating the crust
  • Salt
  • Freshly ground pepper
  • 1 sheet shortcrust pastry, defrosted if frozen

Instructions
  • Preheat your oven to 180C/350F.
  • Put the olive oil and butter in a large pan on low heat and add the onions. Sauté them on low heat, stirring occasionally until they become soft and take a light brown colour. This will take about 30 minutes. Pour in the balsamic vinegar. Sauté for 2 more minutes, season with salt and freshly ground pepper and remove from heat. Let them cool.
  • In a large bowl mix the caramelised onion with the cheese, eggs, all the fresh herbs and corn flour.
  • Prepare a 20x30cm (8x12in) ovenproof pie dish by coating it with a little olive oil. Put the pastry sheet on your working surface and cut a 20x30cm, (8x12in) square piece of pastry using a knife or a pizza cutter. Lay the square in the pan and pour in the caramelised onion filling. With the knife or pizza cutter, cut the left over pastry into thin strips and put them diagonally on the filling. Brush the pastry with milk.
  • Bake the pie in the preheated oven for 45 - 50 minutes until the pastry turns golden
